FRUIT AND VEGETABLE SALADS FOR LUNCH AND BRUNCH

A healthy diet includes a lot of fresh fruits and vegetables which can be eaten any time of the day. The following is a list of quick-and-easy salads that incorporate either fruits or vegetables (or both) for a delicious addition to your lunch or brunch menu.

TEXAS PEA SALAD

A hearty and filling Texas Pea Salad that serves two can be prepared in less than 10 minutes. The recipe calls for black-eyed peas, green, red and jalapeno peppers, onion, olive oil, red wine vinegar, garlic, cilantro, salt and pepper. All of the ingredients are simply mixed together and then refrigerated. It's best to let the salad chill overnight to ensure a proper blend of flavors. So, make the salad the night before, pop it into the refrigerator and it will be ready for lunch the next day. Stir ingredients well before serving.

RASPBERRY GARDEN SALAD WITH ALMONDS

A light and delicious Raspberry Garden Salad with Almonds can be prepared in only minutes with a few simple ingredients: 1 can drained mandarin oranges, 1/2 cup balsamic vinegar, two tablespoons olive oil, two tablespoons sugar, 1/2 cup of fresh, ripe raspberries; mixed salad greens and 1/2 cup raw almonds. Simply mix all the ingredients together except for the greens and the almonds. Chill for about 30 minutes, then remove from the refrigerator, pour over salad greens, sprinkle with almonds and serve. Makes enough topping for 6-8 salads.

AUTUMN WALDORF SALAD

Another simple and quick salad to make is the Autumn Waldorf Salad. The salad is made with apples, celery root, cabbage, onion, kohlrabi, walnuts and either cranberries or raisins that are mixed together in a large bowl. The dressing is made with plain yogurt, grainy mustard, salt, cider vinegar, parley and tarragon mixed together in a small bowl. Allow the dressing to sit while you mix the salad ingredients. Then add the dressing to the salad, toss and serve.

BANANA NUT SALAD

Banana Nut Salad is a quick-and-easy dessert salad made with bananas, chopped nuts, lettuce leaves and unsweetened whipped cream. Bananas are rolled into chopped nuts, placed on the lettuce leaves and covered with whipped cream. Sprinkle some more nuts on top, if desired. That's it. The recipe serves two.
